Fluffy Blueberry Muffins - Gluten-Free Friendly

The most unassuming blueberry muffin my boyfriend claims he'd die for. That's me.

There are currently two things I keep in Ziploc bags in the freezer: dumplings and these blueberry muffins. The perfect TV dinner and breakfast foods. I'm sharing the blueberry muffins because ithe first time my partner had these, his eyes rolled back into his head. It's THAT good and so freaking easy. This makes a full baking tray of 12 muffins.

Preheat the oven to 425°F. Line a muffin tin with paper cups; set aside.

Sift the dry ingredients together:

  • 1 ¾ cup gf flour (use my blend here)
  • 2 tsp baking powder
  • ½ teaspoon salt

Cream well together in a separate bowl:

  • ½ cup or 1 stick butter, softened
  • 1¾ cup granulated sugar

Fold these into the wet mixture:

  • 2 eggs, room temperature
  • 2 tsp vanilla extract
  • ¼ tsp almond extract and sprinkle of nutmeg (opt)

Mix the dry ingredients and ½ cup buttermilk interchangeably into the wet mixture. Leave a bit of flour in the bowl and toss the frozen blueberries in.

  • 1 cup frozen blueberries

Gently fold the blueberries into the batter.

The batter should be thick but still drips with relative ease like lava... I don't know how else to describe it. If I feel the batter is on the stiff side, I add a bit of water until I get the right consistency. If you're unsure, it's easy to do test bakes of 1-2 muffins the first time and tweak the batter as you go along to get a good understanding of what you're looking for. Next time, you'll know the batter you're going for and adjust the recipe accordingly. It took me 2 bakes to get the muffins just right for my liking.

Fill each paper liner about two-thirds full. Tap the tray on the table to let the batter set. Sometimes I'll take a pinch of sugar and drizzle it onto the tops of the muffin for a sugar crust shine on the top if I'm feeling fancy.

Bake for 26-30 minutes, until the center is set.

I let it sit for 5-10 minutes when it is warm to touch and toss it into my freezer bags. Enjoy a muffin when they're lukewarm otherwise the blueberries will be tart as heck.

I defrost my muffins with the fancy "frozen breakfast" option on my microwave but putting it on HIGH for 30 seconds does the same thing.
